La Truitelle

La Truitelle, a member of Occitanie Gourmet, is a small-scale, socially responsible cannery based in the Upper Aude Valley. The brand is reinventing tinned fish using small mountain trout reared according to the principles of organic aquaculture in the fast-flowing waters of the Pyrenees. Tinned whole and packed by hand in the Espéraza workshop, they are prepared with carefully selected organic ingredients, in recipes ranging from simple to gourmet. As the first tinned small fish to carry the AB organic label, they offer a local and innovative alternative to the marine fish traditionally used in the tinned food industry. This eco-friendly and socially responsible approach was notably recognised with the 2022 SIAL Innovation Grand Prix.
