Detailed description
Elaborated in an artisanal way with raw sheep's milk from the Churra and Castilian breeds, ewes native to this province, of recognized lactic characteristics and with very remarkable quality standards, under the guidelines of the Protected Designation of Origin Zamorano's council.
It has a natural brown rind, and a well-defined "pleita" (traditional design etched to the crust by the mould sheaf-pattern) which is bathed in olive oil frequently during ripening. The paste is firm and compact, yellowish ivory in colour, and may have small eyes, evenly distributed throughout the surface.
Zamorano cheese is characterized by having genuine aromas and flavours: specific to raw sheep's milk, well developed and persistent on the palate. Moreover, you can perceive precise organoleptic characteristics with hints of butter, nuts or fresh milk which state the traditional grazing feeding-system of the sheep and the cheese ripening in cheese cellar-type rooms.
