Matured in caves for at least six months, our Caprino di Puglia brings depth and character to the delicate flavour of goat’s milk. Its compact texture melts on the palate, revealing a savoury, gently sweet taste with toasted, nutty aromas and subtle goat’s milk notes. Enjoy it as a table cheese, add it to cheese and charcuterie platters, or use it to enrich traditional dishes.

Hard goat’s milk cheese made with Italian milk, salt, rennet and selected lactic cultures, aged in caves for at least six months. Cylindrical in shape, it has a rough, amber-yellow rind that may show brown markings. Its interior is compact and creamy-white, with a melting texture. The flavour is savoury, mildly sweet and low in acidity, with delicate goat’s milk notes and aromas of cooked milk, nuts and toast.
- Net weight: Approximately 3 kg per whole cheese.
- Packaging: Cardboard box containing 1 whole cheese, or 2 vacuum-packed halves.
- Ageing: At least 6 months in caves.
- Shelf life: 700 days from production for the whole cheese under the specified storage conditions; 180 days from vacuum packing for vacuum-packed formats.
- Storage: +12°C to +15°C, at 80% humidity. Once cut, keep in a ventilated refrigerator at +4°C to +8°C, protect the cut surface and consume within 10 days.
