Detailed description
Rooted in Southern Italy’s cheesemaking tradition, our Caciocavallo Silano DOP is an aged stretched-curd cheese made according to its protected designation’s production specifications. Each cheese bears the Consortium’s distinctive branding, a mark of its identity and authenticity. Initially sweet and yielding on the palate, its flavour becomes more pronounced and slightly piquant as it matures, developing toasted, nutty notes and delicate floral nuances.

Aged stretched-curd cheese made with Italian milk, whey starter, salt and rennet. Pear-shaped with a distinctive head, it has a smooth, pale straw-yellow rind bearing the Consortium’s brand and dairy identification number. Its interior is compact, elastic and soft, with medium-sized eyes. The flavour is milky, slightly tangy and savoury, with toasted, nutty and lingering floral notes.
- Net weight: Approximately 1.6 kg per cheese.
- Packaging: Cardboard box; 4 cheeses per case.
- Shelf life: Up to 700 days from production for the whole cheese, under the specified storage conditions.
- Storage: +4°C to +15°C, at 80% humidity. Once cut, keep in a ventilated environment at +4°C to +8°C, protect the cut surface and consume within 10 days.
- Allergens: Milk and milk derivatives.
- Designation: DOP — Protected Designation of Origin (PDO).
