Description :
Pago de Espejo is the creation of the fourth generation of women olive growers in the Espejo family. In the 1920s, it was the grandmother of the current owner who spearheaded the purchase of the La Condesa estate, located in Villanueva de la Reina, Jaén.
Since then, the women have been the ones who helped in the fields, with the harvest, and in some of the stages of production of their extra virgin olive oil from the Picual variety. Over the years, the estate prospered, and the Espejo family bought the adjacent plots until reaching the 200 hectares they own today.
The estate, located in Villanueva de la Reina, Jaén, has 200 hectares within the same boundary, making it a "pago" or "terroir" that allows them to control the entire production process.
An excellent extra virgin olive oil, from an early harvest, picked in early November and produced with absolute exquisiteness. This extra virgin olive oil is the result of a meticulous harvesting and extraction process. The olives are milled within hours of picking, naturally decanted, and then filtered, thus preserving their incomparable organoleptic properties.
On the nose, the oil presents an intense fruity aroma of green olives, with prominent notes of fresh grass, olive leaf, green almond, and hints of tomato.
On the palate, the freshness of grass and green fruit is prominent, with a sweet entry and a slight peppery finish, characteristic of the Picual variety.
