Detailed description

The oil of dawn, only once a year.

Nothing compares to the first day of the harvest. Only then do the olives offer their peak of polyphenols and aroma. From that fleeting moment, Primer Día de Cosecha (First Day of Harvest) is born. This oil is not just another label: it is the purest moment of the olive grove transformed into a bottle.

Only 1,500 units—numbered by hand. When they are gone, there will be no replenishment until the next harvest.

Variety: 100% extra virgin Picual, the pure expression of our olive grove in Jaén.

Polyphenols: We reach 700 mg/kg, well above the early harvest (≈610 mg).

Color: Intense, vibrant green with natural highlights.

Aroma: Complex and profound: olive leaf, fresh grass, tomato plant, lavender… and fruity notes of green banana, apple, and green almond.

On the palate: A smooth, harmonious entry; followed by a touch of bitterness and a growing spiciness. Elegant and lingering finish.

Acidity: ≈ 0.1º — ultra-low, a sign of exceptional quality.

Production: Harvested in the early morning of the first day of the harvest, cold-pressed in less than 4 hours.

Yield: Approximately 15-16 kg of olives are needed to obtain 1 liter.

Presentation: Premium 500 ml bottle with a handwritten label indicating the number of each bottle out of the 1500 available.

PAGO DE ESPEJO

Pago de Espejo is the creation of the fourth generation of women olive growers in the Espejo family. In the 1920s, it was the grandmother of the current owner who spearheaded the purchase of the La Condesa estate, located in Villanueva de la Reina, Jaén.

Since then, the women have been the ones who helped in the fields, with the harvest, and in some of the stages of production of their extra virgin olive oil from the Picual variety. Over the years, the estate prospered, and the Espejo family bought the adjacent plots until reaching the 200 hectares they own today.

The estate, located in Villanueva de la Reina, Jaén, has 200 hectares within the same boundary, making it a "pago" or "terroir" that allows them to control the entire production process.

An excellent extra virgin olive oil, from an early harvest, picked in early November and produced with absolute exquisiteness. This extra virgin olive oil is the result of a meticulous harvesting and extraction process. The olives are milled within hours of picking, naturally decanted, and then filtered, thus preserving their incomparable organoleptic properties.

On the nose, the oil presents an intense fruity aroma of green olives, with prominent notes of fresh grass, olive leaf, green almond, and hints of tomato.

On the palate, the freshness of grass and green fruit is prominent, with a sweet entry and a slight peppery finish, characteristic of the Picual variety.
