From consumer shifts to AI-driven transformation, the upcoming SIAL Talks programme for SIAL Paris 2026 offers an early glimpse into the debates set to define the food sector, bringing together analysts, brands and institutions to decode emerging trends.

The SIAL Talks stage is set to return as a central forum for dialogue across the global food ecosystem, with conferences scheduled from Saturday 17 October to Wednesday 21 October 2026, running daily from 10:30 am to 6:00 pm. While the full programme is still being finalised, early insights reveal a broad editorial direction shaped by consumer expectations, technological acceleration and structural changes across international markets.

As the global food and beverage industry continues to expand, the need for collective analysis has intensified. SIAL Talks responds to this by creating a platform where market intelligence, industry expertise and forward-looking perspectives converge, offering professionals a clearer understanding of the forces reshaping production, distribution and consumption.

Consumer behaviour and global food trends

Changing consumer behaviour will form a key pillar of this year’s discussions. Demographic shifts, including ageing populations and the influence of younger consumers, are redefining demand. The rise of “silver food” reflects growing interest in products tailored to older consumers, while Gen Z continues to prioritise transparency, sustainability and cultural diversity in food.

Recent insights from Protéines XTC, Circana and Kantar indicate that demand for functional, health-oriented and convenience-led products has strengthened across Europe over the past 18 months, while inflation has accelerated interest in value-driven alternatives such as private labels. These dynamics will be explored on stage, with analysis drawn from SIAL Insights.

Global perspectives will also be brought into focus. The Food Institute will examine macrotrends shaping the food and beverage sector, including geopolitical pressures, climate-related challenges and evolving trade flows. These themes resonate with wider transformations in distribution models, where digital platforms and delivery-first formats continue to reshape how food reaches consumers.

Retail transformation and private label momentum

Retail remains a critical area of focus, particularly as private label products continue to gain ground. At SIAL Talks 2026, Daymon will address how retailer-owned brands are evolving, moving beyond price positioning to emphasise quality, innovation and brand identity.

Across Europe, private label market share has reached record highs in several markets, in some cases exceeding 40 per cent in 2024 according to NielsenIQ. This reflects both consumer sensitivity to price and increased confidence in retailer-curated products.

At the same time, the distinction between retail and foodservice is becoming less defined. New hybrid formats, convenience-led concepts and direct-to-consumer models are reshaping how products are marketed and distributed. These developments highlight broader shifts across the food industry sectors, where adaptability and cross-channel strategies are increasingly essential.

AI, digitalisation and the future of production

Digital transformation will be a main topic throughout the SIAL Talks programme, with artificial intelligence at the centre of many discussions. From predictive analytics in supply chains to automated production systems, AI is rapidly becoming embedded across the food value chain.

Evidence Santé will explore how AI intersects with health, particularly in relation to personalised nutrition and public health strategies. ANIA, meanwhile, will present its vision of the digital food factory, examining how manufacturers are integrating advanced technologies to enhance efficiency and traceability.

Investment in AI across the food industry has grown steadily since 2023, as companies seek to respond to more complex consumer demands while managing cost pressures. Packaging innovation will also be part of this conversation, with increased attention to recyclable materials, smart labelling and data-enabled solutions that support both sustainability and transparency.

Health, nutrition and evolving consumption occasions

Health and nutrition remain central to innovation across the sector. Professor Junghoon Moon from Seoul National University will address wellness lifestyles, including the impact of low glycaemic index diets on food choices. This reflects a broader shift towards preventative health, where consumers are looking for products that support long-term wellbeing.

The growth of functional products illustrates this trend. Categories such as functional coffee, valued at approximately USD 4.48 billion in 2025, demonstrate how consumers are seeking added benefits from everyday consumption. Similar patterns are visible across snacking, bakery and ready-to-eat segments, where convenience and nutrition are increasingly combined.

Snacking itself has become a strategic focus. The Consorzio del Formaggio Parmigiano Reggiano will explore how traditional products can adapt to modern consumption habits, while New Originals will examine global food trends shaped by cultural exchange. NellyRodi is also expected to present insights from its latest white paper, offering a forward-looking perspective on consumer expectations.

A stage for insight, innovation and recognition

Alongside the SIAL Talks conference programme, SIAL Paris will host a series of key events throughout the show. The SIAL Innovation awards ceremony is always a highlight, along with the Alim’Acteurs by Agrorecrute best practice award, the Italian Food Media awards, Les Remarquables by Interfel and the Food Hackathon. Show attendees can also look forward to SIAL For Change for a look at what’s at stake in terms of sustainability and CSR.

SIAL Talks sits within a broader ecosystem of content across the event. SIAL Live will focus on innovation, SIAL Pitch will spotlight startups, and SIAL Summits will address major industry challenges, including sustainability and resilience.

Together, these platforms reflect the diversity of topics shaping the food exhibition 2026. As the SIAL Talks programme continues to take shape, it offers a first indication of the conversations that will define this year’s event.
