At Aljomar, we hold the Welfair animal welfare certification. This certification guarantees animal welfare throughout our entire production process, from raising the Iberian pigs on our farms to the processes in our factory, ensuring the use of good practices throughout the food chain.
Storage
To optimally store Iberian ham, the following recommendations should be followed:
1. If the ham is vacuum-packed or wrapped in any type of material that obstructs airflow, it must be unwrapped so that the ham can be in contact with the air and breathe.
2. It is essential that Iberian ham be stored in a cool, dry place, away from direct sunlight. Places where sudden temperature changes can occur, such as kitchens, are not recommended; cellars or storage rooms are much more suitable.
3. Storage method: The best way to store it is hanging it from a ring or string so that air reaches all parts of the ham as evenly as possible.
4. If you intend to keep this Iberian ham for a considerable period of time, it is best to wipe it down every two weeks with a cloth lightly coated in oil, gently spreading it over the entire leg.
5. Another well-known and traditional method for optimal preservation is to cover the ham, once opened, with a few slices of the side fat (slices that should have been previously saved).
