Detailed description

PYURA — Red Umami · Chef Pouch

by ATACAMA SEAS — Marine Umami Seasoning

The professional format of our dehydrated Chilean piure: a 100 g resealable pouch, for kitchens after a flavour nobody else on the street is serving.

100% dehydrated Chilean piure (Pyura chilensis). One ingredient, nothing else: no salt, no additives, no preservatives, no carriers, no processing aids. Gently dehydrated for 24 hours at 40 °C — a physical process, not a chemical one, so the gastronomic profile survives it.

Piure lives clamped to the coastal rock of the Chilean shore, inside a hide so tough it has to be split open. Chileans have eaten it since pre-Hispanic times; almost nobody outside Chile has ever tasted it. Fresh, it barely travels. Dehydrated, it does — and this pouch is the practical way a kitchen outside Chile can put it on a plate.

What it changes in a professional kitchen: 24 months at ambient temperature, no cold chain, no season to work around, no cleaning and no trim. Every gram in the pouch is finished product.

The pouch: 100 g aluminium doypack with zipper. Food service and fine grocery.

Shelf stable: 24 months at ambient temperature. No cold chain.

Produced by Stefymar, Chile — HACCP certified and FDA registered.

Also available: 10 g gift jars, UNI — Golden Umami (dehydrated Chilean sea urchin roe), and a duo gift box of both, a SIAL Innovation 2026 Selection. Bulk bags of 1 kg and 5 kg on request.

ATACAMA SEAS launches worldwide at SIAL Paris 2026. Importers, distributors and food service partners are being appointed.

STEFYMAR

Stefymar is a Chilean seafood company on the coast of the Humboldt Current, the cold-water upwelling that makes the Pacific off Chile one of the richest marine ecosystems on earth. We work six of its species — king crab (centolla), Chilean abalone or loco (Concholepas concholepas), sea urchin (uni), piure (Pyura chilensis), octopus and salmon — into two gourmet ranges of shellfish and fish specialities, both shelf stable at ambient temperature.

MOUSSES DEL PACÍFICO: artisanal, spreadable seafood mousses, ready to serve, presented in elegant 60 g glass jars with a 12-month shelf life. Six varieties, available individually or as a gift collection pack of flavours, for delicatessen, fine food retail and food service.

ATACAMA SEAS: marine umami seasonings with one ingredient and nothing added, gently dehydrated for 24 hours at 40°C — a physical process, not chemistry — so the gastronomic profile survives intact. Extreme clean label: no salt, additives, preservatives, carriers or processing aids, and 24 months at ambient. Its UNI & PYURA duo is part of the SIAL Innovation 2026 Selection: 100% sea urchin gonads and 100% Pyura chilensis, a species eaten in Chile since pre-Hispanic times and virtually unknown to the rest of the world — natural taste enhancers for chefs and the food industry.

Our raw material comes from artisanal fishing coves. Certified HACCP and FDA, and holder of the Chilean Sello Azul seal for sustainable fishing. Based on the coast of the Valparaíso Region, we export from Chile and are looking for importers, distributors, delicatessen and gourmet retail buyers, and fine-dining partners in Europe, Asia and North America.

Atacama Seas

Atacama Seas — Marine Umami Seasoning

Chilean Marine Essence Duo: UNI & PYURA, by Atacama Seas, has been selected by the independent jury of SIAL Innovation Paris 2026.

Atacama Seas is Stefymar's new line of premium marine seasonings. It begins with a simple idea: bringing the intensity of sea urchin and piure from the small-scale fishing coves of Atacama to kitchens around the world. Its name evokes that meeting of desert and sea, on a coast shaped by the cold waters of the Humboldt Current.

The collection presents two species and two expressions of umami: UNI – Golden Umami, Chilean sea urchin (Loxechinus albus), sweet, buttery and briny in profile; and PYURA – Red Umami, piure (Pyura chilensis), intense, mineral and deeply marine.

A slow, low-temperature dehydration lasting more than 24 hours turns both species into fine powders of concentrated flavour. The pure versions keep for 24 months at ambient temperature, with no cold chain and with no added salt, additives, preservatives, carriers or processing aids. One species, nothing else: this is how Atacama Seas defines its Extreme Clean Label proposition.

This stability makes distribution and storage easier, and allows the ingredients to be used without freezing or thawing. One gram concentrates the flavour of ten grams of fresh product; the powder format makes it easy to dose exactly what each preparation needs.

Designed for chefs and food lovers alike, UNI and PYURA bring depth to stocks, butters, emulsions, pasta, rice dishes and sauces. The duo box brings both profiles together as a culinary discovery and a gourmet gift.

The line is completed by seasoning salts combining sea urchin or piure with salt from the Atacama Desert. The piure variety adds a touch of merkén, the traditional Mapuche smoked chilli condiment, which brings notes of smoke and heat to its marine character.

Available in 10 g jars, the UNI & PYURA duo box, 100 g Chef Pouches and 70 g salts, Atacama Seas offers formats for specialty retail, gourmet gifting and foodservice, backed by Stefymar, a Chilean seafood company since 2009.
