The color of the base shell and the color of the kernel vary from year to year.</p><p> Pistachio size is indicated by the number of whole pistachios per ounce. Sizes range from 16-18 per ounce to 30 or more per ounce. Size availability varies from year to year. </p><p> The following varieties are available: raw, roasted salted and roasted without salt.</p>
