Medium-early harvest oil, produced in early November when the fruitiness is at a semi-ripe stage, processed in less than 6 hours from the mechanical harvesting of the olives in the field to their milling. It is obtained through 100% mechanical processes with cold extraction and no additives, guaranteeing a minimum product stability of two years. Green in color, with a balanced medium bitterness and pungency, and a light sweetness. Tasting notes: on the nose, light fruitiness with aromas of apple, almond shell, tomato, and banana. Perfect as an accompaniment to meats, vegetables, fish, and salads, its use is recommended both for cooking at low temperatures and for raw consumption.
