Detailed description
The green mung bean (Vigna radiata), also widely known simply as mung bean, is a legume of high nutritional value and great global commercial importance, extensively cultivated in Asia and expanding across other agricultural regions. It is a short-cycle plant adapted to warm climates, whose pods produce small, bright green oval seeds. In Brazil and worldwide, it stands out both for its agricultural versatility—serving as an excellent green manure and cover crop—and for its functional and health properties.
Rich in proteins, fiber, B-complex vitamins, and essential minerals, the green mung bean is highly versatile in international cuisine. It is the star ingredient for producing bean sprouts, widely used in Asian cooking, and is also consumed boiled in soups, salads, curries, traditional porridges (such as India's kitchari), and rice dishes. Its mild natural sweetness and tender texture after cooking make it an ideal ingredient for both savory dishes and sweet recipes in Asian confectionery.
