Extra Virgin Olive Oil, Green Fruity - GAEC La Borie, Haute-Provence - <p>Set in Haute-Provence, the GAEC La Borie olive grove covers more than eight hectares and comprises close to 3,200 trees, tended year-round by the Drac family. Harvesting takes place in early November, while the fruit is still green, and the olives are pressed just a few hours after picking — a very short interval that preserves the full aromatic potential and yields an oil of remarkable cleanness. On the nose, the green fruity profile opens on artichoke, layered with pear and red fruit. On the palate it is soft on the attack, then develops its characteristic hints of astringency before closing on green banana skin. A finishing oil, best used raw over roasted vegetables, white fish, or as a salad dressing.</p>

Extra virgin olive oil, green fruity category, from an early harvest. Cultivars: Aglandau, Frantoio and Bouteillan. Origin: Haute-Provence, France. Cold extraction, milled at Moulin de la Fine. Limited production of 650 litres for the vintage. Available in 100 ml, 250 ml and 500 ml formats. Producer: GAEC La Borie, Drac family. Full range also available: green fruity, ripe fruity and black (naturally matured) olive oil.
