Vinification
Each variety is harvested separately at its optimum stage of ripeness and vinified individually in order to preserve its distinctive aromatic and structural character.
Careful grape selection is followed by cold maceration, enhancing aromatic expression while maintaining freshness and precision. Fermentation is carefully controlled at low temperatures to preserve the purity and vibrancy of the fruit.
Ageing
The three varieties follow individual maturation paths before the final blending. Part of the Assyrtiko is matured in acacia barrels, adding subtle texture and complexity while preserving its freshness and mineral character.
The Chardonnay undergoes a short period of barrel maturation, approximately 6 months, contributing additional roundness and depth without dominating the wine’s aromatic profile.
Blending Philosophy
The final blend is assembled only after the individual components have developed their own character. Assyrtiko contributes freshness, tension and structure; Malagouzia brings aromatic intensity and floral expression; while Chardonnay adds texture, depth and gentle roundness.
The result is a vibrant, precise and gastronomic white wine that combines aromatic generosity with crisp acidity, balance and a long, refreshing finish.
