Detailed description
100% natural product, made from the cooking of purple corn (Zea mays L. amilaceae st.) in treated water, to be filtered, pasteurized, cooled and frozen for an adequate conservation. It does not contain preservatives, flavours, or artifical colours. This product has not received a sterilization process to ensure complete inactivation of pathogenic micoorganisms and their spores.

Frozen purple corn water extract (Zea mays L. amylacea st.), obtained from treated purple corn water and processed by cooking at >100 °C and pasteurization at 90–95 °C for at least 30 seconds, followed by cold filling at ≤12 °C. The product has an intense purple color, characteristic flavor and aroma, and a homogeneous appearance free from foreign particles. Specifications are 0.2–1.0 °Brix and pH 4.7–5.8, with controlled microbiological limits. Packaged in 18, 180 or 190 kg LDPE bags with metallic drums or plastic pails as secondary packaging. Store at ≤−18 °C. Shelf life: 12 months under recommended storage conditions.
