Fresh artichokes with stem, perfectly intact after being selected, are blanched in an aqueous solution of white wine vinegar, citric acid, L-ascorbic acid, and salt. The artichokes, removed from the solution, are selected and seasoned with various spices. They are then bottled with sunflower seed oil and, once capped, pasteurized (heat treated). Finally, they are packaged in thermopacks (made of heat-shrinkable plastic).
