In world in constant evolution, food issues are a major challenge. We have to face not onlya significant increase in the global population but also a change of eating habits.
In this context, it is important to consider the potential of plant protein. Direct consumption of vegetable protein in human food must be made more attractive by playing on both their origins, and their nutritional, organoleptic, functional and economic characteristics.
