  • MOZZARELLA DI BUFALA CAMPANA, THE PDO'S QUEEN CHEESES

    Production: the PDO - Protected Designation of Origin - Mozzarella di Bufala Campana is made only with whole fresh water-buffalo milk coming from the farms located in traditional production area of Central-Southern Italy, where the Campania region represents the 93% of the production, because of that the geographical indication of the name `Campana'.

    Curiosity - The name Mozzarella comes from the italian verb `mozzare' that means to cut off, the handmade operation that the cheesemaker makes, still now, to have the single shapes of the cheese.

    PDO certification - Only the designation Mozzarella di Bufala Campana had the PDO seals by the European Union because of its characteristics of quality, history, link with the production area.

    Amount: in 2015 the production of Mozzarella di Bufala Campana was 41.295 tons, that means the fourth PDO cheese of Italy, after Grana Padano, Parmigiano Reggiano and Gorgonzola.

    Creamery: 102 firms producing Mozzarella di Bufala Campana (2015): 93% in Caserta and Salerno provinces, 7% in the South area of Lazio, and Foggia (Puglia).

    Water-Buffalo: 345.000 animals breaded in PDO area, 1.371 farms.

    Trade - All the Mozzarella di Bufala Campana produced is sold: 68% in Italy, 32% is the export.
